Difficulty finding birth for Karen Pedersdatter

My Karen Pedersdatter was born around 1766.  After several days of looking I finally found her marriage record but when I went to look for her birth in the same parish I came up empty.  Then I looked in the neighbouring Parish and found nothing.  I checked Levring to 1771, Hørup to 1769.

Her marriage to Jens Jensen Oustrup was 18 Apr 1796 in Levring, Lysgård, Viborg, Denmark: https://www.sa.dk/ao-soegesider/da/billedviser?epid=17124824#166098,27902580

Jens Jensen Oustrup was married firstly to Anna Kathrine Eriksdatter and she died 11 Mar 1796 in Oustrup after they had 5 children: Jens, Erik, Anna Kirstine, Poul and Søren.

Jens died 3 May 1802 in Oustrup, Thorning, Lysgård, Viborg, Denmark after he and Karen Pedersdatter had 4 children together: Anna Kathrine, Kirstine Marie, Else Marie and Peder.

Karen Pedersdatter married secondly to Jens Sørensen on 28 Jul 1802 in Thorning, Lysgård, Viborg, Denmark and they had 3 children: Anna, Jens and Søren.

According to her marriage record she is in Midstrup, Levring, Lysgård, Viborg, Denmark on 18 Apr 1796.

In 1801, she is living in Oustrup, Thorning, Lysgård, Viborg, Denmark with her husband, children, step-children and her father, Peder Jensen aged 66 years.  There are a couple of options for her on the 1787 Census but in both cases that Karen is 18 years old.

She died 29 Aug 1831 in Oustrup, Thorning, Lysgård, Viborg, Denmark at the age of 64.

I am not sure where to look next.  I know her father is Peder Jensen but I have no idea what her mother's name is or when and where Karen Pedersdatter was born.  Any help is greatly appreciated.

Just a minor detail, at the time of her death Karen - according to the churchbook you link to - lived not in Oustrup, but in Vatrup, cf. bottom here:

At the 1801 census her location is indeed Oustrup, cf. last family listed here:

Did she move from Oustrup to permanently live in Vatrup on marrying Jens Sørensen in 1802?

Another small point seems to be the date of Karen's first marriage. As I read the churchbook April 18th 1796 was the day of her betrothal to Jens Jensen of Oustrup. The marriage I read to have taken place on Tuesday June 21st.

In the census for Levring parish in 1787 also I spot an 18-year old maid as a candidate in family no. 25 at the top ( note that the title of maid - Tieneste Pige - does not exclude a family relation ):

Karen's parents may possibly be in the 1787 census as well. A candidate couple appear in Skrae in Thorning parish, see 3rd family here:

Is it plausible that Karen's mother was named Dorte Jensdatter?
