My translation to this letter:

    Vickfield 8th May
Dear friend
I will write few
word for You to let You
know we all are well except
Glen who has been
very ill but now he is
better again – but
you must believe Dear Friend
it has Hard in the night
to be alone. I Have had
a letter from Stine, she is
in Beingham. I Have seen
Peter Olesen about the Hayland
And he give it water and
Jens Hanson have planted
Corn and Potates at
Both Barns. I Have not
Paid Gust Vestmann yet


I have tried to keep it close to the written.

'Barn' (lade) must be a stand in for farm.  Corn must be maize here, but the similarity to Danish 'korn' and the older British usage of corn might leave open the notion of small grain/wheat.
