I have a fæste for my Hans Christophersen and I thought I found the actual page but now I am not so sure.

I see that entry #8 mentions Peder Hansen who may or may not have some relation to Hans Christophersen's wife, Maren Hansdatter. The database record does not translate well.
Hans Christophersen age 35 married Maren Hansdatter age 37 on 14 Jan 1826 in Stubberup, Bjerge, Odense, Denmark. The marriage is also recorded in Viby. In both cases he is listed as a widow and she is single. Hans was married firstly to Dorthe Madsdatter 19 Jan 1816 in Dalby, Bjerge, Odense, Denmark and she died 20 Oct 1825 in Hersnap, Dalby, Bjerge, Odense, Denmark.

Maren Hansdatter was born 15 Sep 1788 in Snave, Stubberup, Bjerge, Odense, Denmark to Hans Hansen and Anna Olsdatter. There is another Maren Hansdatter on the same page but I do not think this is my Maren Hansdatter because the birthplace does not look like Snave.
Based on 1834 Census and 1838 death records for Hans Christophersen he is born around 1789-1791 and since all of the documents say he is from Hersnap, Dalby, Bjerge, Odense, Denmark presumably this is where he was born but I have not been able to find a record.

Apparently the father of Maren Christophersdatter might be Christopher Smed from Viby or Kerteminde. Still trying to figure out which sister might be the mother of Hans Christophersen.

I checked Viby 1778-1791 and then Kerteminde 1780-1791 for a marriage between Christopher Hansen and someone Christophersdatter but came up empty.
Christopher Smed (born around 1720) had the following children with an unknown spouse:
Karen Christophersdatter (1742 in Måle, Viby, Bjerge, Odense, Denmark and dies 1823) who married Hans Olsen 19 May 1776. They had Maren, Ursula and Karen.
Anna Dorthe Christophersdatter (22 Nov 1744 in Måle, Viby, Bjerge, Odense, Denmark). No further information.
Lars Christophersen (24 Nov 1748 in Måle, Viby, Bjerge, Odense, Denmark). No further information.
Maren Christophersdatter (2 Jul 1752 in Måle, Viby, Bjerge, Odense, Denmark-12 Apr 1830 in Hersnap, Dalby, Bjerge, Odense, Denmark) who married Peder Hansen 21 Feb 1782 in Måle, Viby, Bjerge, Odense, Denmark. No children found.
The logical choice would be Anna Dorthe as the mother of Hans Christophersen but he had the following children:

Thank you so much Inger. I was on the completely wrong track all because I misread the 1801 Census as "her sister's son" instead of "his sister's son". Yes, he was known as Møller Peder Hansen Høgh.

I have not found Christopher Mortensen or Anna Hansdatter Høgh in the census in København or Odense in 1787 or 1801. Anna is in København by 1789 per the excerpt of her mother's probate but I have not found a marriage record in Kerteminde or København 1787-1790.
Do the military records say anything of note?
The military records only tell us that Hans came to Hersnap around 1797. At first he didn't have a proper ceritficate of baptism,
but when a certificate issued according to the regulations was produced in 1798, proving that he was born in Copenhagen, he
was removed from the levying roll. Before 1848 only sons of farmers were entered in the Danish levying rolls.
It could be the same Christopher Mortensen in 1805, but I cannot find him in the 1801 Census, either.
