Jens Pedersen was given the surname 'Kold' in the 1801 census for Ersted, Aarestrup, Aalborg amt & on his death record from 1812.
Is 'Kold' a place name or does it refer to a trade?
Best wishes, Rog
Hi Roger
The name 'Kold' is not a name of a specific place. It mean 'cold' or in old Danish 'rounded'
.
There are places where 'Kold' is part of the name such as Koldby, or Koldbjerg.
The name Koldby is thought to refer to a 'kold kilde' (a cold water spring), whereas 'Koldbjerg' refers to a hill with a rounded top (kold is here in the meaning rounded).

I see that his son Peder Jensen is also called Kold here in 1834: https://www.danishfamilysearch.dk/cid2323361 (https://www.danishfamilysearch.dk/cid2323361)
Kold as a surname can be traced to Christen Kold, born ca. 1510, died ca. 1596 in Thorup Holme, Thisted Amt in northern Jutland.
Many of his descendants kept the name, and some held somewhat prestiguous positions. I bet they were often godfathers and godmothers at baptisms, and some people might have named their children after them. I've seen it sometimes with some of my ancestors - a man working at a large manor has a son, and names him after the lord of the manor, with the lord's surname as the child's middlename. I thought for a while that one of my ancestors had Rosenkrantz ancestry until I worked that little puzzle out. So that's one possibility of what could have happened here.
Have you found Jens Pedersen Kolds baptism?
Here is the confirmation of Jens Pedersen Kold. It is 1828 number 2. His parents lived in Ersted, Aarestrup, Aalborg. Accoding to the record he must have been born in 1813. https://www.sa.dk/ao-soegesider/billedviser?bsid=173201#173201,29105403
Perhaps this is his birth in Aarestrup. Note he had a twin brother Peder. The name Kold is not in this record. https://www.sa.dk/ao-soegesider/billedviser?bsid=173201#173201,29105334
Accoding to the 1834 census Jens would have had a brother Christen who was born in 1809. Here is the birth of Christen, but note the name Kold is not used. https://www.sa.dk/ao-soegesider/billedviser?bsid=173200#173200,29105298. Note that one of the witnesses is Søren Kold and in the birth just before this the father is Søren Jensen Kold and one of the witnesses is Peder Jensen.
And here is the marriage of Peder Jensen and Hedvig Pedersdatter in 1808.
Here is the marriage of widower Peder Jensen Kold to Kirstine Andersdatter. https://www.sa.dk/ao-soegesider/billedviser?bsid=173201#173201,29105420
And the proof that Peder Jensen and Peder Jensen Kold are the same person. Here is the 1828 death of Hedevig Pedersdatter, the wife of Peder Jensen Kold. https://www.sa.dk/ao-soegesider/billedviser?bsid=173201#173201,29105459
I forgot to include the record of Peder Jensen and Hedvig Pedersdatter´s marriage so here it is https://www.sa.dk/ao-soegesider/billedviser?bsid=173200#173200,29105325
And here is Hedvig Pedersdatter in the 1801 census

Thanks for all the help. Peders brother Søren Kold or Soren Jensen Kold was called Kold at his death in 1807. I have Jens Pedersen Kolds baptism from 1742 and no reference to a Kold there. No godmothers or godfathers in any of his childrens baptisms.
Kindest regards, Rog
Hi Roger,
My 5th great grandfather, Jørgen Simonsen, and his brother, Rasmus Simonsen, both added Løndahl as their last name in the 1700s. But Rasmus added it about 20 years before Jørgen. Perhaps this also is what happened with Kold.
