Thank you, Ralph. I was hoping there might be something in there that could help me find where Mette Kirstine came from. Doesn't appear to have anything different than the other marriage record. Will keep looking.
It looks like she was serving Jochum in 1803, so probably also in 1801. If so, you should have her birth year close enough to find her again in the 1787 census. In both of them the 'age' is the year entered into, not the years completed.
I see that the 1787 side gets a little more complicated, with no Mette Kirstine Nielsdatter spelled out, and too many Mette Nielsdatters of about the right age.
My first suggestion did work out:
