Ole Rasmussen of S. Broby,
was in service in Ølsted

In Danish that is:
En datter af Aftægts i Gaard
Ole Rasmussen i S. Broby
tjente i Ølsted

I hope to get better at these, but it's hard learning the language AND learning the hand writing at the same time. 

"Aftægts i Gaard" was new words to me.

It does not say "Aftægts i Gaard" but Aftægts=Gmd.
"Aftægt" is "pensioner", "Gmd." is "Gaardmand" abbreviated, "farmer".

Could you please tell me what this word means?

This came off of a census.  It is in the column which states the relationship of the person to the head of household.  Based on her age and name I expected this to be a sister or sister in law.  But it doesn't look like "sister" in Danish to me.

Could you please tell me which town/parish Peter Petersen Gellert is from with the attached photo.  I can read the rest.  I thought he was from Vamdrup but that does not look like Vamdrup in the image.  It's a very short word.

He was from Vamdrup more precise Øster Vamdrup (Easter Vamdrup writen Østervamdrup)

Oh I'm sorry.  I thought the word before Kirsten was the town he was from.  I forgot that was her "title" or "occupation".  I could clearly see Østervamdrup at the end but I thought only she was from Østervamdrup.

This is the same person on the 1870 Census. 

You can see on the bottom line his wife is from Vamdrup.  But his birth place (top line) looks different.

Here is from the birth record of the same individual in case this helps.  It looks like the mother's name is Agnes ___ Gellert on this record.
